What a fast shot means
A shot pouring too fast looks unmistakable: you start the pump and the coffee streams out in seconds, pale and thin like watered-down tea rather than dark and syrupy, and the whole thing is over almost before it began. A standard double that should take a while to build and flow instead blurts out in ten or fifteen seconds. It sprints through, the pump never gets to build real pressure against the puck, and the shot is finished in seconds.
The fix is to grind finer, and to change only the grind so you can read the effect cleanly. Finer particles pack more tightly and leave smaller gaps, which slows the water and lets pressure build. Go finer by a step, pull again, and the shot should take longer and pour darker and thicker. Channelling and an uneven puck
Even with the right grind and dose, a shot can still run fast if the puck is uneven. This is channelling: instead of pressing evenly through the whole bed, the water finds one weak spot — a crack, a loose edge, a tilted surface — and carves a fast tunnel straight through it, blasting out while most of the coffee sits barely touched. A channelled shot pours quicker than it should, often squirts unevenly or sprays, and tastes hollow and sharp because so much of the puck was skipped. The fix is preparation. Distribute the grounds so they sit level in the basket before you tamp — break up clumps and even out the surface — then tamp level, pressing straight down so the bed is flat rather than sloped. Before you chase your grind too far, check which basket you are using, because it changes what a fast shot even means. Filter baskets come in two kinds. A traditional (single-wall) basket has open holes and gives you honest feedback: if it gushes, your grind or dose really is off. A pressurised (dual-wall) basket has a hidden restrictor that creates back-pressure artificially, and it is far more forgiving of a coarse grind — which cuts both ways. As beans age they lose the carbon dioxide the roast put into them, and that off-gassing changes how the grounds behave under water — old, flat coffee tends to offer less resistance and drink up less of the water's energy, so a setting that gave you a good shot on fresh beans can start gushing on beans that have sat for months. Work it like this. First, grind finer, and only finer, until the shot slows from a gush to a steady, darker pour rather than sprinting out; this fixes the great majority of fast shots. Second, check the dose— top the basket up to its rated level so the puck is not loose and shallow, and weigh it so it's the same every time.
