Espresso Machine Pressure: 9, 15 and 20 Bar Explained

The bar number is the most misunderstood spec on the box. Espresso is a nine-bar drink, so why do machines shout 15 or 20? Here's what those numbers really measure, and why a bigger one is not a better machine.

Espresso is a nine-bar drink

The single most useful fact about espresso pressure is this: espresso is extracted at roughly nine bars of pressure at the coffee, and has been since the lever machines that defined the drink. A bar is about the pressure of the atmosphere at sea level, so nine bars is nine times that — enough to force hot water through a dense, finely-ground puck in the 25 to 30 seconds a shot should take. That number, nine, is the target every good machine is built around, whatever it prints on the box.

Hold onto it, because it is the yardstick that makes the rest of this page make sense. When you see a machine advertised at 15 bar or 20 bar, the immediate question to ask is not "is more better?" but "more of what, measured where?" — because the answer reveals that the big number and the number that matters are measuring two completely different things.

So why does the box say 15 or 20?

Nearly every home machine advertises a 15 bar pump, and some shout 20 or more. That figure is real, but it is the pump's maximum — the most pressure the pump can generate against a completely blocked outlet — not the pressure the coffee ever sees. A common vibratory pump can push to around 15 bar at its peak, and manufacturers print that peak because it is a big, impressive-sounding number, not because your espresso is made at it.

Think of it like the top speed on a car's speedometer. A dial that reads to 160 does not mean the car drives at 160; it means the needle can reach there. The espresso equivalent is that a 15 bar pump brews at about nine bar, because the machine deliberately throws the extra pressure away before it reaches the coffee. A machine marketed on "20 bar!" is not making stronger espresso than a nine-bar café machine — it is advertising the pump's ceiling and hoping you read it as quality.

The valve that sheds the difference

How does a 15-bar pump end up brewing at nine? With a small part called an over-pressure valve (OPV), sometimes called an expansion valve. It is a spring-loaded relief valve set to open at a target pressure — around nine bars on a well-set-up machine — so that once the pressure at the group reaches that point, the excess is bled off back into the tank instead of being forced onto the puck. The pump can strain to 15; the OPV makes sure the coffee only ever sees nine.

This is why the bar rating is almost meaningless as a quality signal: two machines with identical 15 bar pumps can brew very differently depending on how their OPV is set, and the good ones are set to nine. On enthusiast machines like the Gaggia Classic Pro, adjusting the OPV is one of the first popular mods, precisely because the pump number is not the brew number and owners want to dial the actual brew pressure. Gaggia's own North American documentation states the Classic Pro's valve is calibrated to nine bar — the number that counts.

The grind makes the real pressure

Here is the part that reframes the whole topic. The pump provides the capacity for pressure, but the pressure the coffee actually experiences during the shot is created by the puck resisting the water — and that resistance is set by your grind. Grind too coarse and the water rushes through the gaps, the puck never builds resistance, the pressure at the coffee never reaches nine bar, and the shot gushes out pale and sour. Grind fine enough and the puck fights back, the pressure builds to the machine's set point, and you get a proper shot.

So the pressure that matters is not a fixed number the machine hands you — it is a collaboration between the machine's OPV setting and the puck your grinder makes. This is why on espresso the grinder matters more than the machine: the machine can only ever supply the ceiling, and the grind decides whether you reach it. A gushing, under-pressured shot is a grind problem, diagnosed in weak or watery espresso; a choked, over-resisted one is the opposite, in espresso shot choking. Both are about the grind, not the bar rating.

Pre-infusion and the pressure curve

Better machines add nuance to when the pressure arrives. Pre-infusionwets the puck gently at low pressure for a moment before the full nine bars hit, which lets the coffee swell and settle evenly so the water does not blast a channel through a dry bed. Breville's machines run low-pressure pre-infusion; the Bambino Plus is a compact example.

At the far end of the hobby, lever and paddle machines let you shape the entire pressure curveby hand — ramping up, holding, and declining through the shot. That is a real tool for a skilled barista, but it is a refinement of the same nine-bar idea, not a replacement for it. For almost everyone, "pre-infuse, then hold around nine bar" is the whole story, and pre-infusion is a genuinely useful feature where a big bar number is not.

Pressurised baskets fake it

One more source of confusion, and it is a big one. A pressurised (dual-wall) basket creates back-pressure artificially, at a single tiny hole behind the visible mesh, rather than letting the coffee puck create it. That means the shot builds a plausible pressure and a plausible crema regardless of your grind — which is exactly why entry machines ship one, and exactly why a bad grinder can seem fine on it.

The catch is that this pressure is manufactured by the basket, not earned by the coffee, so it puts a hard ceiling on the shot and it hides what your grind is really doing. Switch to a traditional basket and the pressure at the puck once again depends entirely on your grind — which is honest, and less forgiving. What this means when you buy

Put it all together and the practical advice is short. When you shop, ignore the bar rating— 15 or 20, it is the pump's maximum and every decent machine brews at about nine regardless. A listing that leads with a big bar number is telling you it has nothing better to say; a listing shouting "20 bar!" is a small red flag, not a feature. Look instead at the things that genuinely shape pressure at the coffee: whether the machine has pre-infusion, what basket it ships, and — above all — whether you are pairing it with a grinder that can build real resistance in the puck.
